At Bisoukie, our mission is to bring joy, comfort, and a touch of French pastry excellence to every cookie we bake. We believe in generous, handcrafted treats made with real ingredients, no shortcuts, and absolutely nothing artificial.

FOUNDER - THOMAS O.
Thomas is originally from France and has been baking since the age of four—first with his mother, and then more extensively with his grandmother. His passion led him to pursue an apprenticeship with the renowned Compagnons du Devoir school in France. He went on to work in various bakeries across the country before returning to his hometown in Alsace to deepen his craft by studying pastry and specializing in confectionery.
Following a second apprenticeship in a prestigious pastry shop near Strasbourg, Thomas transitioned to the restaurant world as a pastry chef. It was there that he truly found the freedom to express his creativity and refine his style and palate.
His journey then took him across the globe, working in top-tier restaurants in Canada and the Caribbean. Twelve years ago, he decided to settle in Melbourne and have worked for Messina Baccash, Laurent Patisserie and a Treat of France.
After taking a creative detour into the events and film industry, Thomas co-founded a company with a friend—a collective of food enthusiasts and a taste certification organization. Today, they work with clients from all over the world, recognized for their unique expertise in sensory evaluation.
In 2025, Thomas chose to return to his roots. His mission: to reimagine a beloved classic of Western culture and infuse it with the generous spirit of traditional French pâtisserie.
