MY Mission



At Bisoukie, my mission is to bring joy, comfort, and a touch of French pastry excellence to every cookie we bake. I believe in generous, handcrafted treats made with real ingredients, no shortcuts, and absolutely nothing artificial.

FOUNDER - THOMAS O.


I'm originally from France and have been baking since I was four alongside my mother, and then more seriously with my grandmother. That early passion led me to an apprenticeship with the renowned Compagnons du Devoir school back home. From there, I worked in a range of bakeries across the country before returning to my hometown in Alsace to go deeper into the craft, focusing on pastry and eventually specializing in confectionery.

After a second apprenticeship in a high-end pastry shop near Strasbourg, I made the move into the restaurant world as a pastry chef. That’s where I truly found the freedom to express my creativity and refine both my style and my palate.

My journey then took me abroad, working in top-tier restaurants in Canada and the Caribbean. Twelve years ago, I decided to settle in Melbourne, where I’ve had the chance to work with Messina Baccash, Laurent Patisserie, and A Treat of France.

At one point, I took a creative detour into the events and film industry, which eventually led me to co-found a company with a friend and collective of food lovers and a taste certification organization. Today, we collaborate with clients around the globe, known for our unique expertise in sensory evaluation.

In 2025, I made the decision to return to my roots. My mission now is to reimagine a beloved classic of Western culture and infuse it with the generous, joyful spirit of traditional French pâtisserie.
