Meet Thomas

Born and raised in France, Thomas has been baking since the age of four. Trained at the prestigious Compagnons du Devoir and refined through years in top kitchens across France, Canada, the Caribbean, and Melbourne, he brings a rich, global perspective to the art of pastry. After co-founding an international taste certification collective, Thomas returned to his roots in 2025 with a clear mission: to reimagine a Western classic through the generous, creative spirit of French pâtisserie.
